I'm often asked about AAC and transcoding (converting) it to MP3. While there are some commercial converters available, while fiddling with iTunes can I foudn that it can do this for free. In the deep dark recesses of the preferences, there's a way to convert your M4A files (AAC) to MP3s. Click Edit > Preferences > Advanced (tab) > Importing (subtab) and you'll see this:

If you choose MP3 as the encoder, then back in iTunes the right-click context menu will give you the option to convert M4A files to MP3s. (Or other formats, but not music from the iTunes music store as it's protected with DRM.)
